Blind Scouse

This is the vegetarian version of a traditional stew from Liverpool called Scouse. It has onions, carrots, potatoes, pearl barley, white beans, mixed herbs, veggie stock cubes and salt and pepper.



It's so delicious! I even puréed some for baby. 

Recipe was a combination of several recipes that I studied online from YouTube, the Scouse Veg website and the Being Mrs Gardom blog.

Vegan Mouse Blind Scouse ( rhymes!)

1 large onion chopped
3 large carrots sliced
4-5 small to medium yellow potatoes, quartered or halved
A few handfuls of pearl barley - about 1/3 cup? -soaked or not- I didn't have time to soak overnight. You can soak them in hot water for one hour if you want.)
1 tsp mixed dried herbs (Rosemary sage and thyme)
2 veggie stock cubes 
1 can white beans drained and rinsed
Salt and pepper to taste 

Sauté the onions and carrots in 2 tablespoons of olive oil. Cook until the onions are a bit soft. Add the potatoes, barley, herbs, stock cubes crumbled, salt and pepper and then cover with water. Bring to the boil and cook for a few minutes. Add the white beans, bring to the boil again and then lower the heat to simmer for two hours. Add water if it seems too dry.
Adjust seasoning to your tastes.

Salaaaaad Piiiiizzza!

Can you tell I love making salad pizza? I think I've showcased it three times in the last month already. It's do easy to make and delicious! 

I made sundried tomato pesto for the base. With lots of garlic! Before I spread the pesto, I brushed the hot crust with the oil from the sundried tomato jar. It had lovely infused flavors of herbs and sundried tomatoes. 👍

I dressed the arugula and cherry tomato with olive oil and balsamic. It was a good move. I also added cooked field roast sausage and zucchini.

Hank's dinner.

Henri had a yummy dinner tonight. Pita with chickpea spread, sweet potato falafel, broccoli and avocado. He ate everything but the broccoli. Dessert was applesauce and a cutie. He didn't eat it like this, I had to tear off little pieces for him.

This guy loves fruits and bread mostly. He likes certain veggies like peas, butternut squash, sweet potato, carrots, zucchini but doesn't care for broccoli. I think if I had mixed it into another dish, he wouldn't mind. As for protein, he likes chickpeas, lentils, tofu and sometimes fish. (He's not vegan.) He doesn't like chicken, eggs or beef much which is fine with me! Every now and then he'll eat a little chicken with his dad.

Buddha bowl lunch.

Buddha bowl lunch: couscous, Palak Paneer Tofu, roasted sweet potatoes, broccoli and red peppers, beet salad, hummus and garlic sauce.

Roasted broccoli is amazing. You should try it. Cauliflower too. It gets all charred and delicious!

Really nice spinach curry with tofu. I didn't add butter beans to mine. Instead of diced,  I used crushed tomato. Came out really nice in flavor.

Salad pizza for dinner!

Easy pizzas made with store bought flatbread, jarred marinara and yummy toppings like Tofurky Andouille sausage, red onions, mushroom and marinated artichokes.

Salad Pizza!


The Happy Pear recipe for salad pizza on YouTube is genius! It has an easy pizza dough base that's thin and crisp like a cracker. After baked, it's topped with homemade sundried tomato pesto and all the VEGGIES! I dressed my arugula with lemon, olive oil and salt for extra flavor. It's also drizzled with balsamic and olive oil over the whole thing. 





Made one for my dad too. I added marinara on his base to make it saucier.

Smoky sausage and bean stew (again)!


I really enjoyed this dish last time I made it. I did a few things different this time. I used white beans instead of Lima beans, zucchini instead of celery, leek instead of scallion. It's so delicious. Anything cooked with white wine is gonna be good.

I used Tofurky Andouille sausage. Yum. 

The smoky paprika gives it such a great flavor.




Carrot Cake!

I made this luscious carrot cake this morning. It's from The Superfun Times Vegan Holiday cookbook in the Easter section. It's so good! The icing was improvised using melted Earth Balance, powdered sugar, lemon juice, vanilla, soymilk.
